Make your own Muesli!

Homemade Muesli

without all the added sugar, high in protein, and fibre!

Making your own Muesli isn't a chore when it only takes less than five minutes to get it ready to pop into the oven to bake. What's more is that you can use the same Muesli to make your own Muesli bars for snacking on during the day. Here's the base recipe for you to make it yourself. 

Ingredients

2 cups of rolled oats

1 cup of sunflower seeds

1 cup of pumpkin seeds

1 cup of coconut chips or what you have in your home

1/2 cup of sesame seeds (you could add chia, but I tend to add these when I am about to serve). 

2 tablespoons of Coconut oil

1 teaspoon of vanilla essence

Instructions

I used a smaller tray for this, but the larger the tray you use, the less time it needs to bake. Preheat the oven to 160-170C. 

Add all the dry ingredients to the tray. 

Put coconut oil and vanilla essence into a small bowl and melt (in the microwave for 20 seconds). Give it a mix, and then pour over the dry ingredients and mix well. 

Bake in the oven for 10 minutes. Remove from the oven and mix. Return to the oven for another 10 minutes. Don't overbake, as it makes the mixture quite dry to eat. 

For breakfast, I add three tablespoons of muesli to my bowl, three tablespoons of yoghurt and mix. You can add a tablespoon of peanut butter or almond butter to add protein and fat. Mix again. I then add some chopped fruit, kiwifruit at the moment, plums or peaches when in season to add some sweetness and liquid. 

You can make this with milk of course, and you can prepare your breakfast in advance, leaving it in the fridge to soak up all the liquid and for quick access on those hurried days.
